The vines are 17 years old and located between the foot of the Venchansko Kale and the Zlatina River.

The soil is sandy-clay carbonates. The exposure is Southeast. Altitude – 90 m.

Technology:
The grapes are picked by hand in small boxes and transported to the winery.
The cooled grapes are manually sorted, crushed, and gently pressed at low pressure. The finest must is cold-settled and racked for alcoholic fermentation. The temperature of alcoholic fermentation is controlled at 11-15°C.

Titratable acids – 7.2 g/l
pH – 3.05
Residual sugars – 1.9 g/l

Aging:
The wine is aged for 3 months on the fine lees.

All wines are with low intervention. The appearance of a noble lees is possible.

Tasting notes

Sauvignon Blanc 2022’s aroma is concentrated in the direction of fresh tropical fruit - mango, supported by a feeling of limestone and a hint of green nettle. Tight medium body with well-pronounced minerality and inviting acidity.

It is successfully combined with delicate cheeses such as brie, mozzarella, and ricotta or with fresher and saltier cheeses such as feta or goat cheese. Fish, seafood, crustaceans, white meats, and green salads are also suitable additions.
