The vineyards are 12 years old, located at the foot of the Provadian Surta Plateau.
The soils are limestone – sandy, the exhibition is southwest.
Technology:
The grapes are hand-picked in small boxes and transported in a refrigerated truck.
The cooled grapes are sorted by hand and crushed in small open fermenters. After the natural increase in temperature, the fermentation is controlled in the range of 20-25 ° C.
The cap is plunged and pumped over daily

Ageing:
The wine matures for 6 months in Bulgarian oak barrels and 6 months in a stainless steel tank.

Pinot Noir of Odessos Cellar is loaded with a pleasant fruity aroma of ripe strawberries, cherries, earthy notes and woody mushroom. Elegant solid body, representing a good balance between fruit and earthy flavors. An unconventional representative of the variety, aged for one year with cherry wood.

It is successfully combined with delicate cheeses (brie, mozzarella, etc.) and with fresher and saltier cheeses such as feta or goat cheese. White or red meats as well as sausages are also a suitable addition.
