Dimyat Byala Single Vineyard

The vineyards are 40 years old and are located next to the seafront of the picturesque area and the beach of Kara Dere.
The soils are strongly calcareous. The exhibition is south-southeast. Altitude - 40 m.
The grapes are hand-picked in small boxes and transported in a refrigerated truck.
The cooled grapes are sorted by hand, crushed and pressed.
The temperature of the alcoholic fermentation is controlled at 15-18°C.

Titratable acids - 6.6 g/L
pH – 3.1
Residual sugars 0.8 g/l
The wine matures for 3 months on fine lees.
Wines have minimal processing. Noble sediment is possible.

The aroma of Dimyat 2021 has the characteristics of the variety - neutral, delicate nose of green apple and pea shoot, distinct minerality and salinity in taste. Tight, muscular body with excellent freshness and inviting finish.

Combines successfully with Black Sea fish, seafood, crustaceans, white meat. Delicate cheeses such as brie, mozzarella and ricotta are also a good combination.
