Vineyards:

Vetrino village, PGU Danube Plain

The vines are 14-years old, located near the village of Vetrino, Varna region, in the Babuka area.

The soils are alluvial and stony. The altitude is 300 m.

Technology:

The grapes are hand-picked in small boxes and transported in a refrigerated truck.

The chilled grapes are sorted by hand and crushed in small open fermenters.

The crushed grapes are cooled and infused for 3 days until the desired color is achieved, after which they are pressed. The must naturally increases its temperature and begins spontaneous alcoholic fermentation. The temperature is controlled in the range of 18-22°C.

After 14 days, the wine is transferred to small Bulgarian barrels for malolactic fermentation.

Ageing:

The wine is aged for 3 months in Bulgarian barrels on the fine lees and three months in a stainless steel container.

The wines have minimal processing and no filtration. Noble sediment is possible.
